My current favorite: sweet and spicy pasta
An easy weeknight recipe I’m loving right now—simple to make and packed with flavor!
Sausage, Shiitake & Asparagus Pasta
Serves 2
Ingredients:
½ lb ground sausage
8 oz shiitake mushrooms, stems removed and sliced
1 bunch asparagus, ends trimmed and cut into 1-inch pieces
6–8 oz of your favorite pasta
4–6 garlic cloves, finely chopped
4 tbsp butter
¼ cup honey
¼ cup apple cider vinegar
¼ cup gochujang paste
Parmesan cheese, for topping
Instructions:
Cook the pasta according to package directions. Before draining, reserve 1 cup of the pasta water. Drain, toss the pasta with a little oil to prevent sticking, and cover to keep warm.
In a large pan, cook the sausage and shiitake mushrooms over medium heat until the sausage is browned and the mushrooms are tender.
Add the asparagus, garlic, and butter, and cook for another 1–2 minutes until the garlic is fragrant and the asparagus is slightly tender.
In a small bowl, whisk together the honey, apple cider vinegar, and gochujang paste. Pour the mixture into the pan along with the reserved pasta water, stirring to combine.
Add the cooked pasta to the pan and toss everything together until well coated and heated through.
Plate and top with freshly grated Parmesan cheese—it really brings it all together!
