Ingredients
1 lb chicken tenders
¼ cup arrowroot (or cornstarch)
1 tsp smoked paprika
2–3 tbsp butter
1 onion, thinly sliced
3 cloves garlic, chopped
2 sprigs thyme
1 Honeycrisp apple, cored + sliced
½ cup apple cider vinegar
1 can coconut cream
½ cup Gruyère, shredded
Salt + pepper
Instructions
Preheat oven to 425°F.
In a bowl, toss chicken with arrowroot, paprika, salt, and pepper.
Heat a skillet, add 1 tbsp butter, and sear chicken (in batches if needed) 3–4 minutes per side until golden. Transfer to a plate.
Add another tbsp butter to the pan, then onions. Cook 3–4 minutes until softened. Add garlic, thyme, salt, and pepper.
Deglaze with apple cider vinegar, cooking until mostly reduced. Stir in coconut cream.
Return chicken to the pan, top with apple slices, and sprinkle Gruyère over everything.
Transfer skillet to oven and bake 10–15 minutes, until chicken is cooked through and cheese is bubbling and lightly browned.
Serve hot and enjoy the cozy mix of sweet, savory, and cheesy goodness.
